Whey Isolate vs Concentrate vs Hydrolysate: What You Are Paying For

Isolate costs 30 to 100 per cent more per gram of protein than concentrate. Here is what that premium actually buys, why the lactose argument mostly does not hold, and the variable that matters more than any of it.

Three words dominate the front of whey protein tubs — concentrate, isolate, hydrolysate — and the price gap between them is substantial. Most of what is written about the difference is written by people selling the expensive one.

Here is what actually separates them, what that separation is worth, and where the difference is real rather than rhetorical.

Where they come from

All three start in the same place. Liquid whey is a by-product of cheesemaking, and it is mostly water: around 93 per cent water, 0.8 per cent protein, 4.9 per cent lactose, with small amounts of fat and minerals. Everything that follows is a filtration problem.

Concentrate

Ultrafiltration pushes the liquid through membranes that hold back the larger protein molecules while lactose, minerals and soluble salts pass through. Diafiltration washes out more lactose. What remains is evaporated and spray-dried.

Commercial concentrate ranges enormously — anywhere from 34 to 85 per cent protein. The version sold as a sports powder is almost always at the top of that range, and is labelled WPC80.

Isolate

Isolate is defined by reaching at least 90 per cent protein, and there are two quite different routes to it.

Cross-flow microfiltration uses membranes at low temperature and pH. It retains glycomacropeptide, a whey fraction that survives the process largely intact — a typical cross-flow isolate is 20 to 22 per cent glycomacropeptide.

Ion exchange binds proteins by electrical charge. It achieves higher protein purity and strips minerals more aggressively, but it selectively removes certain fractions — glycomacropeptide is essentially lost. It also consumes regeneration chemicals that account for the majority of its operating cost.

These produce genuinely different products, even though nobody has demonstrated that the difference changes any outcome you would notice.

Hydrolysate

Hydrolysate is whey that has been partially broken down with enzymes before you drink it — pre-digested, in effect. It absorbs faster and tastes noticeably more bitter.

The composition table, which is the whole argument

Typical dry-matter composition:

  • WPC 35: 36 per cent protein, 46.5 per cent lactose, 2.1 per cent fat
  • WPC 80: 81 per cent protein, 3.5 per cent lactose, 7.2 per cent fat
  • WPI 90: 90.5 per cent protein, 0.9 per cent lactose, 0.8 per cent fat

Run that through a 30 g scoop and the picture becomes concrete. A scoop of WPC80 contains roughly 1 gram of lactose. A scoop of isolate contains roughly 0.3 grams.

The lactose question, answered with numbers

This is the most common reason people are steered toward isolate, and for most of them it does not hold up.

The European Food Safety Authority’s review of the evidence concluded that most people diagnosed with lactose intolerance tolerate 12 grams of lactose in a single dose with no or minor symptoms, particularly when taken with food. Many tolerate 20 to 24 grams spread across a day. There is real individual variation — a sensitive minority reacts below 6 grams — and no single threshold applies to everyone.

Set that against one gram per scoop of concentrate. That is roughly one-twelfth of the dose most lactose-intolerant people handle without symptoms.

So if concentrate genuinely upsets your stomach, the lactose is unlikely to be the reason at that dose. It is worth considering the fat content, the sweeteners, the gums and thickeners, or simply drinking it too fast on an empty stomach. Isolate genuinely helps a specific group: people at the sensitive end of the range, people taking multiple servings a day, and people stacking whey on top of other dairy.

The one form that would cause real trouble is WPC35, at around 14 grams of lactose per 30 g — and that is a food ingredient, not something sold as a sports powder.

Does hydrolysate absorb faster? Yes. Does it matter? No.

Whey is already the fastest-absorbing common protein. Speeding up something that is already fast runs into a ceiling: muscle protein synthesis saturates, and pushing amino acids into the bloodstream more rapidly does not push more of them into muscle.

The clearest demonstration comes from work showing that a 40 per cent greater leucine exposure produced identical muscle protein synthesis. If a large difference in leucine delivery does not change the outcome, a modest difference in absorption speed will not either.

Hydrolysate has legitimate uses in clinical nutrition and infant formula, where reduced allergenicity matters. As a premium tier for people trying to build muscle, it is a solution to a problem that does not exist.

“Undenatured” and “cold-processed”

These terms appear constantly and mean much less than they suggest.

Denaturation unfolds a protein’s three-dimensional structure. It does not change the amino acids, which is what your muscle actually uses. Moderate denaturation can slightly increase digestibility by exposing more of the peptide chain to your enzymes. And your stomach acid denatures the protein on arrival regardless of how gently it was processed.

There is a genuine processing concern — excessive heat can drive Maillard reactions that block lysine and reduce protein quality — but nobody markets on it, because it would require disclosing processing temperatures rather than using an adjective.

What it costs

The honest comparison is cost per gram of protein, not cost per pound and certainly not cost per scoop, because both scoop sizes and protein density vary.

Across the current US market, whey powders run from about $0.023 to $0.085 per gram of protein. Warehouse-brand concentrate sits at the bottom. Mid-market concentrate lands around $0.045. Isolates cluster between $0.058 and $0.059. Premium-branded products of either type reach $0.085.

So isolate typically costs 30 to 100 per cent more per gram of protein than concentrate.

What that premium buys, factually: about 9 percentage points more protein by weight, about 0.7 g less lactose per serving, roughly 6 percentage points less fat, and around 10 fewer calories.

What it does not buy: any demonstrated difference in muscle protein synthesis, strength or muscle gain in a healthy person who is hitting their daily protein target.

The variable that actually differentiates products

It is not concentrate versus isolate. It is testing.

The Clean Label Project analysed 160 protein products from 70 brands in January 2025 and reported that 47 per cent exceeded a federal or state safety threshold for at least one contaminant, with 21 per cent exceeding twice California’s Proposition 65 lead level.

The pattern within that is more useful than the headline. Plant-based products fared worst — 77 per cent above Prop 65 lead levels, with roughly five times the cadmium of whey. Whey-based products came in at 28 per cent, consistently lower than plant. Products labelled organic did worse, not better: 79 per cent above Prop 65 lead levels, driven largely by organic plant products, at roughly three times the lead of non-organic. And chocolate flavours contained about 110 times the cadmium of vanilla.

Some caveats belong with those numbers. Clean Label Project is an advocacy organisation rather than a regulator, Prop 65 thresholds are deliberately conservative and are not toxicity thresholds, and industry bodies publicly disputed the framing. Report it as what it is: a signal, not a verdict.

The practical takeaway holds either way. Look for third-party certification — NSF Certified for Sport, or Informed Sport. That is orthogonal to whether a product is concentrate or isolate, and it is the one quality marker that means something specific.

What to actually buy

If you tolerate dairy and you are hitting your protein target, concentrate is the rational default. It is cheaper per gram of protein and there is no outcome difference.

Choose isolate if you are genuinely at the sensitive end for lactose, if you take several servings a day, if you are managing calories tightly enough that 10 kcal and a gram of fat per serving matter, or if you simply prefer how it mixes.

Skip hydrolysate unless you have a clinical reason for it.

And in all three cases, the label tells you more than the category name does — protein per scoop rather than per serving size, a short ingredients list, and third-party testing. Our own whey is a cross-flow isolate, which we chose for the lactose and fat profile rather than because we think isolate builds more muscle. It does not, and we would rather say so.
